Oolong Teas
Oolong teas fall somewhere between black and green teas. Less caffeinated than black tea, they are only partially bruised, oxidized, and dried. Only 3% of the world's tea production is in oolong varieties. They are typically very high-quality teas with a crisp, clean flavor.
Oolongs should be brewed in steaming (slightly less than boiling) water for 3-7 mintues and can be resteeped.
