Black Teas and Black Tea Blends
Black teas are the leaf of the tea plant (Camellia Sinensis) that have been wilted, crushed, oxidized, then dried. The vast majority of black tea is produced in China and India. However, there are many exotic tea regions around the world from the Indian Ocean to Africa and the Middle East.
Steep black teas in boiling water for 4-6 minutes. Do not resteep.

Oolong Teas
Oolong teas fall somewhere between black and green teas. Less caffeinated than black tea, they are only partially bruised, oxidized, and dried. Only 3% of the world's tea production is in oolong varieties. They are typically very high-quality teas with a crisp, clean flavor.
Oolongs should be brewed in steaming (slightly less than boiling) water for 3-7 mintues and can be resteeped.

Green Teas
Green teas are less processed than black teas. They make a much lighter cup with less caffeine and lots of anti-oxidants. Green teas have been recently popularized in the US through a variety of methods, most oriented towards greater health.
Green teas should be steeped in steaming (slightly less than boiling) water for 2-3 minutes. Do not resteep.

White Teas
Typically picked in the first flush of the spring season, white teas are made from only the most tender leaves and bud sets of new growth. The leaves are full of anti-oxidants and have practically no caffeine. Very light in color and flavor, white teas are lovely any time of day.
White teas should be steeped in steaming water (less than boiling) for 30 seconds to 2 minutes. Leaves can be resteeped.

Tisane and Herbal Teas
Tisanes are herbal brews, typically containing no actual tea plant (Camellia Sinensis) leaves. They may be made from the leaves, roots, flowers, or fruits of other plants that are brewed and drunk like tea.
Tisanes should be steeped in boiling water for 5-7 minutes and can be resteeped.
